Seven Layer Bar Coconut Macaroons
Ingredients
1 1/3 cups flaked coconut
1/3 cup sugar
2 egg whites
2 tablespoons all purpose or gluten free flour
1/8 teaspoon salt
1/4 teaspoon vanilla extract
1/4 cup milk chocolate chips
1/3 cup butterscotch chips
1/3 cup chopped pecans
Directions
Line a baking sheet with parchment paper or a silpat and preheat your oven to 325 degrees.
In a medium bowl, combine coconut, sugar, flour, and salt.
Stir in egg whites and vanilla - mix well.
Add chocolate chips, butterscotch chips, and pecans - mis well.
I used a tablespoon measuring spoon to get consistent sized cookies, and I pressed them into tight moundst to keep as much air out as possible.
Bake for 18-20 minutes or until golden brown.
Cool on a wire rack.
This recipe makes about a dozen cookies.
