Spinach, Chicken, and Pasta Salad
Dressing
2/3 cups soy sauce
6 tablespoons sugar
2/3 cups rice vinegar
1/2 cup canola oil
1/2 teaspoon pepper
1/2 cup chopped fresh parsley
Mix vigorously together.
Salad
1 bag baby spinach
12 oz. bow tie pasta (cooked and cooled)
1/4 cup sunflower seeds
4 chicken breasts (boiled, cooled, and shredded)
3 green onions (chopped)
Marinate the shredded chicken in dressing for at least 2 hours.
Cook pasta and cool. Chop onions. 1/2 hour before serving, mix all ingredients together and refrigerate.
