Lemon Curd

Lemon Curd

2/3 c. fresh lemon juice
1 c. sugar
5 well beaten eggs
1/2 c. melted butter (no substitute), cooled slightly

In glass/microwavable bowl:
Mix together well the juice, sugar and eggs.
Slowly beat in the cooled butter.

Microwave 4 to 6 minutes stirring every minute until thickened. Time depends on your oven's strength.
